Hello!

I’m Katie! A pastry chef from Derry in Northern Ireland, obsessed with all things sweet.

From the age of 16 I spent my school summer holidays in London, staging at restaurants like Honey and Co and bakeries like Luminary Bakery. After finishing secondary school I knew cooking was going to be the career for me so I enrolled at Ballymaloe Cookery School in Ireland on their 12 week cookery course before moving to London to work as a chef.

I started my cooking career with Henrietta Inman at her residency cafe in Leyton. The ethos of the cafe was cooking with the seasons and using local producers. I helped make her signature fruit filled frangipane tarts, soda breads made using heritage grains and super deep quiches packed full of local cheeses.

I have loved working with Luminary Bakery to produce bakes for their Stoke Newington cafe as well as their new location in Camden. They are an amazing social enterprise bakery who give disadvantaged women in London the skills and empowerment to build a better future for themselves.

When I’m not cooking you’ll find me recipe testing at home in East London, exploring new bakeries and restaurants or spinning and running to burn off all that cake.
